Our Carob honey is ethically sourced from the mountains of Foum Jamaa and Zaouiat Cheikh, located in the High and Middle Atlas.
The aroma of this dark amber honey is reminiscent of the fruit of the carob tree. It has a light malty flavour, a sweet chocolate taste, and a creamy mouthfeel, despite its pungent odour. It tastes quite fruity with chocolate overtones in its crystallized stage but sweet with a hint of bitterness in its liquid form.
The carob tree is considered the only Mediterranean tree that blooms in summer and autumn (August to November). Carob flowers generate nectarous substances with a higher quantity and sugar content in the female flower than male carob blossoms.
This honey is high in antioxidants and minerals, making it useful for a variety of medicinal and therapeutic purposes. We propose using it to sweeten hot drinks or as a substitute for refined sugar in pastries.
